 Watermelon :
According to the USDA Carotenoid data base, watermelon is
the leader in Lycopene among fruits and vegetables. Lycopene is
a carotenoid and pigment that gives watermelon its red color.
There have been a number of studies that make the correlation
between lycopene and the possible prevention of cancer, heart
disease and stroke. Watermelon also has vitamins C, A and
beta-carotene. It is also a source of potassium, which is
thought to help control blood pressure and possibly prevent
strokes.
