 Spinach :
What doesn’t spinach have? It is very rich in vitamin A, K,
manganese and folate. Spinach also has good amounts of
magnesium, iron, vitamin C, B2, B6, calcium, potassium,
tryptophan, copper and fiber. Then there is B1, protein,
phosphorus, zinc, vitamin E, omega 3 fatty acids, niacin and
selenium. There have been at least 13 different flavonoid
compounds identified that are powerful antioxidants and
anti-cancer agents. One carotenoid found in spinach called
neoxantihin, causes prostate cancer cells to self destruct then
is converted in the intestines into compounds called neochromes
which put prostate cancer cells into stasis preventing
replication. Spinach has chlorophyll and glutathione which helps
the liver in detox processes. Octacosanol present in spinach is
a nutritent that promotes stamina and energy. The fiber in
spinach helps control cholesterol levels.
