 Kale:
Kale is a member of the cabbage family. Kale has substantial
mineral content, providing manganese as well as some iron,
calcium and potassium. Also present is the important antioxidant
vitamin E. Kale contains lutein and zeaxanthan which protect the
eyes from macular degeneration. It also contains
indole-3-carbinol which may protect against colon cancer. Kale
has Sulforaphane, known to strongly stimulate the body’s natural
cellular detoxifying enzymes. Kale eases lung congestion and is
beneficial to stomach, liver, and the immune system. It is an
excellent source of calcium, iron, vitamins A, C and
