 Blueberry
(Vaccinium corymbosum): Blueberries are high in fiber and
low in calories and pack more disease-fighting antioxidants than
practically any other fruit or vegetable including kale,
broccoli and oranges. Researchers at Tufts University found that
2/3 cup of blueberries supplied the same antioxidant protection
against free radicals as 1,773 I.U. of vitamin E or 1270 mgs of
vitamin C. They rank 3rd on the list of 40 fruits and vegetables
tested for antioxidant potential. Researchers believe that the
antioxidants and pectin in the fruit may help protect LDL
cholesterol from oxidation and slow buildup of plaque in the
coronary arteries. Blueberries are rich in anthocyanosides,
which may protect both the lens of the eye and the retina from
oxidative damage. Blueberries also contain vitamins A, C and E,
zinc, iron, potassium, calcium and magnesium. |
